deeelicious!

Last weekend we were camping out at the Arapiles for a weekend of climbing and relaxing – Victoria and their love of the Melbourne Cup awarded us with a 4 day weekend to spend together! This was a wonderful surprise coming from a state where the interest extends to maybe some long liquid lunches on the day of the big race.

I’ll share some more details of the camping trip and how we handled climbing camping and a 4 1/2 drive with an 11 week old soon, this post is all about the food. Specifically the dessert I enjoyed after dinner at the local café. A layer of strawberries, some maple syrup, mint leaves, yoghurt, and some chopped roasted almonds. So simple, so delicious!

I made a very simple version the other night, some lovely strawberries and blueberries topped with greek yoghurt and a little maple syrup. It sounds very boring I know but for the next little while I am resetting my body by limiting foods that don’t agree with me. This includes most sweeteners, honey and maple syrup included, nuts and dried fruit, and dairy… soooo I’ll next be making this with the berries and a vanilla whipped coconut cream sans maple syrup. I’ll let you know how it goes!
