anzac biscuits

I suspect I wont be able to eat another one of these till next year. I had to eat the irregularly sized ones before giving them to John, it was a hard job but really, you simple can’t give someone a gift of misshapen biscuits…

The recipe I modified this year was very simple and produced a tasty and slightly chewy biscuit.

Ingredients:

  • 1 cup plain flour
  • 1 cup rolled oats (not the fast cooking oats)
  • 1 cup shredded coconut
  • 1/2 cup brown sugar
  • 125g butter
  • 2.5 tbs golden syrup (nearly 3 tbs)
  • 1 tsp bicarbonate of soda

Method:

  • Preheat oven to 160°C (320°F).
  • Sift the flour and mix well with the oats, coconut and brown sugar.
  • Melt the butter with the golden syrup and 2.5 tbs of water, and then add the teaspoon of bicarb. Stir so it goes all frothy, add straight away to the dry mixture and mix well.
  • Using a tablespoon of mixture per biscuit, roll into balls and then flatten with a fork.
  • Bake for 10min and leave them to cool slightly and harden before taking them off the tray (they will squish & fall apart if you don’t)
